I don't have a recipe for Los Cucos but this one is legit. Instead of cooking the veggies in a pan I roast them.

Anyone have the recipe for La Familia (Barron Rd) MEDIUM green sauce? Not the one that is the color of that Ninfa's sauce. It's phenomenal.

I'm a fan of the Cucos green and my sister got a recipe for the Gringo's green which is similar:
4 to 5 avocados
16oz sour cream
1 can rotel
1 - 4oz can green chilies
Handful of chopped cilantro
1 to 2 jalapeƱos
1 tablespoon garlic salt
1 tsp lemon juice

Mix in a blender and chill. Makes a ton fyi.

I've been on a green salsa/salsita kick trying different iterations. I made this one today and it might be my favorite this far:
3 tomatillo
5 jalapenos
1 poblano
1/2 medium onion
I placed all of the above in an air fryer (tomatillo went into a ramekins otherwise the juice leaks everywhere and I wanted to retain as much of it as I could.)
Cooked 10 min turning a couple times through the cook.
Once cooked I tented the poblano to ease skinning it... you can do the same for the jalapenos of you choose.
Peel of the skin and remove stems from peppers. PLace everything in food processor. Add small handful of cilantro and juice of half a lime. Salt to taste. As you blend add a bit of Avocado oil. If say 2-3 T. This gives it the creamy texture you want (emulsifies it) thin with water if desired. Profit.

> First peel and wash tomatillos, wash peppers.
> Boil tomatillos and peppers for 10 mins
> Scoop out of water into blender
> Add onion and small handful of cilantro and salt to taste.
> Blend and let cool (I put my blender n the fridge while I cut the avocados)
> Add avocados and sour cream to mixture. (Equal parts avocado and sour cream...the more you add the less heat you will taste from the peppers.

More or less followed my same recipe as above albeit with a couple more japs this time. But then I added one small Avocado and several heavy dollops of Mexican Sour Cream. That resulted in this... not quite the same as Ninfa's but pretty darn good all the same!
