I've been on a green salsa/salsita kick trying different iterations. I made this one today and it might be my favorite this far:
3 tomatillo
5 jalapenos
1 poblano
1/2 medium onion
I placed all of the above in an air fryer (tomatillo went into a ramekins otherwise the juice leaks everywhere and I wanted to retain as much of it as I could.)
Cooked 10 min turning a couple times through the cook.
Once cooked I tented the poblano to ease skinning it... you can do the same for the jalapenos of you choose.
Peel of the skin and remove stems from peppers. PLace everything in food processor. Add small handful of cilantro and juice of half a lime. Salt to taste. As you blend add a bit of Avocado oil. If say 2-3 T. This gives it the creamy texture you want (emulsifies it) thin with water if desired. Profit.
