Chud's BBQ YouTube gave me the idea to try this. Sharp cheddar, cream, butter, sodium citrate. Pour into a mold and chill. Then you have sharp cheddar that melts like American cheese. Made some epic cheese burgers.
You don't need the cream or butter, they dilute the cheese flavor. Just add 1/4 tsp sodium citrate to 1/2 cup water, bring to a simmer an add 8 oz of cheese (your voice). Pour onto wax paper and cut into slices.
