Homemade Mexican Food

Long story short...

Our now 6 year old little girl befriends an older Mexican couple in church 3 or 4 years ago. Just slides down the pew and the next thing you know they are bringing her little gifts and stuff and we visit every weekend after Mass. Sweet, sweet people.

Fast forward 3 years and half the time our 6 year old ditches us to sit with them.

In the last month, we find out he is 83 and she is 87.

Why do I post this on the food board? Well, mama Yollie started calling and texting to be sure we are going to be at church the last few weeks.

Chicken mole, Carne guisada, stewed pork chops, Spanish rice with a touch of water chestnuts, charro and refried beans, tortillas and hot sauce.

The photos are terrible, but my gosh, one thing I never expected is to have home cooked meals by an 87 year old Mexican lady. This is one of those rare, unexpected treasures in life.

My all-time favorite dish is chile colorado. I'm 100% Mex but my American wife loves my mom's cooking, everything except for menudo.

Did you post a recipe in the last week or two? I thought I remember reading a thread? I have never tried it.

I am hispanic and I have seen this before
1. You are probably making that abuelita as happy as she makes your 6 yr old, ladies like that live to cook and I don't there is a greater pleasure in life for them than to see someone eating their food. I have seen that my entire upbringing in south tx
2. I love chili colorado, my wife is from El Paso and chili colorado is a big thing there.

I think it is pretty cool that your 6 yr old befriended them, probably adds years to their life. She should nickname them Lito and Lita. (Short for abueLITO and abueLITA)

Not being familiar with chile colorado I found this recipe. It's almost the exact same recipe that I use for chili, so what exactly makes it chile colorado rather than what I would refer to as regular Texas chili?

Really the size of the meat and the form of the dried chiles.
Texas chili as going to be ground beef, chili grind, or 1/4-1/2" dice and predominantly uses ground chili powder. Chile Colorado is your traditional stew size and uses re-hydrated red chile puree.

Appreciate the reply. Guess I've been making Chile Colorado all this time since I use 1/2" diced chuck and rehydrated New Mexico and ancho chilies.

I used to use chili powders as well, but after the "Did Someone Say Chili" thread I started using rehydrated and never looked back. Same with Pork Chile Verde, just different choices of chiles. It is really not much effort to either rehydrate dried or char fresh chiles and the flavor is a huge level up from the powdered stuff.

Wasn't me. The other link posted seems similar. I know my mom doesn't have a precise recipe.
