Wild Pig Sausage Recipe?

Shot a 80-90 lb pig a few days ago and am going to grind it up this weekend and looking for recipes. Definitely want to do breakfast sausage, but does anyone have any other ideas/recipes? Also assume I'll have to grind up a pork butt or something store bought as well to get more fat into it? Thanks.

It will depend on how fat the pig is, but I'm thinking you'll want to add some straight pork fat in addition to pork butts to get the fat percentage right. It's a gigantic pain to do, but when you bone out the pig, separate the fat from the lean. Then you can easily figure out how much fat you'll need to add, if any.
