Chicken Scampi Recipe Help

I am a huge fan of chicken scampi and while it may be frowned upon here, Olive Garden makes some good chicken scampi. I took a look at their copy cat recipe but wanted to see if anyone has their own that they follow?

I plan on making this tonight so any help is appreciated!

Scampi may be the italian equivalent of fajitas in that it refers to the actual protein in question and not the dish. Scampi is a Mediterranean crustacean and is usually prepped in butter, like how a fajita is a cut of the inside skirt steak.

What I'm trying to say is that the idea of chicken scampi is just as stupid as chicken fajitas.

No idea about their recipe but what I normally do is heat a combination of butter and olive oil in a skillet and saute some garlic, add some red pepper, then the shrimp. Once the shrimp are almost done I take them out and deglaze with white wine. Add the shrimp back to the pan once the sauce no longer smells like alcohol with the pasta once the sauce no longer smells like alcohol and a little bit of the pasta cooking water. Finish with fresh herbs and lemon, taste for salt/pepper and adjust accordingly.

I suppose the same concept would work just fine for chicken or even pork.

Shrimp has now been substituted for chicken because I forgot to thaw the chicken and shrimp is ready to cook in the refrigerator!

If time I like to sous vide shrimp in a bag of butter perfectly at 135 then toss in the finished sauce right at the end.

Yes! I fixed some a couple of weeks ago, and it was absolutely delicious! Was looking for some chicken picatta recipes and came across one for salmon. Salmon is my wife and daughters favorite fish, so it was a huge hit at home, and will be part of our regular rotation.

Find your favorite piccata recipe.

Use 4oz to 6oz center cut fillets with skin off

Season the salmon with salt & pepper, or however you like, and then sprinkle, only one side, with flour and then pat/rub it in.

Cook the side with flour first. Then flip making sure to undercook it, set it aside because you're not done.

Finish the piccata sauce in the pan then return the salmon to the pan, tilting the pan to baste whilst it finishes cooking.

Viola!
