If you don't know what these are it is a basically a $200 MSRP Paco Jet. Think an end-mill for frozen food.

I knew about the paco jets from modernist cuisine but didn't know about this until I saw a James hoffman video where he uses one to make a coffee ice cream.

Sam's had these on sale for $149 with a 3rd beaker. So I picked one up.

Had a can of pineapple in the cabinet so I made some pineapple sorbet. Literally, dumped the can in the beaker, froze it overnight and ran it through the machine twice. I'll be damned if this isnt a perfect sorbet.

We have one and realy enjoy it. Pie fillings make nice sorbets, we use the brand Lucky Leaf, 21 oz cans. Tangerine and apple are my favorite but the others are good also.

Made some coconut milk ice cream with it last night. Perfect texture but too coconuty for me. Might try adding some cocoa powder or some other flavor

Made some maple gelato last night and put it on some waffles for dessert.

10/10 would recommend. Might have to serve it with some candied bacon next time

When I was taking John Siebert's AGEC marketing class, one of our guest speakers was a lady from HEB (name escapes me) who was over frozen foods. According to her, which frozen products they stocked was ultimately her call and in the position she tried samples of more things than we could imagine from name brand companies to start-ups.

She was asked what her favorite ice cream flavor was. She said someone wanted her to sell cream style corn ice cream and she said it was her favorite hands down though she opted not to carry it thinking customers would be turned off at the thought of it and not even try it.

Since then, I've always wondered about it. I'll find out if I pick one of these up.

That would definitely been a risky stocking choice.

I am disgusted and intrigued at the same time.....I now understand how ever chick I've ever hooked up with must have felt.

Well, she may have been onto something. I I tried it and it was fantastic. I' m going to have fun with this machine.

I used a base made of 8 oz each of both half & half and whole milk plus 1 tsp of both Stevia and vanilla extract.

The corn was a 15 oz can plus about 4 oz of the base processed as lite ice cream. Creamy and savory.

I also did a blackberry 'sorbet' of about 16 oz frozen blackberries and and 4oz of the base.

I have 4 pint containers so I did 3.5 bananas plus 1/2 cup each of peanut butter and strawberry jelly as ice cream (great texture and pleased with the taste but will modify) slightly) and also tried a pumpkin pie ice cream with about 10 oz canned pumpkin, 1 tsp pumpkin pie spice, and 6 oz of base. It had a really good flavor but was too crumbly to hold any form - I assume due to the pumpkin being so low in moisture content. This one has potential but I'll need to work on it.

If it comes out crumbly, it usually due to your freezer being set too cold. Some people with colder freezers play with the amount of time they let it sit out prior to spinning.Hit the respin button and that should smooth it out for you.

Thanks for that.

I've used that function a time or two at it does certainly help, but I'm also experimenting with ingredients and settings so I've just got some dialing in to do with things I'm making multiple times.

I acknowledged the book of recipes it came with, but started on my own path right out of the gate so I'm sure part of my results are due to combinations and bases that just don't work.

I've had some turn out great as well so it's been fun.

  • 1 cup heavy cream
  • 1 can (8 ounces) corn, strained
  • 4 large egg yolks
  • 1/3 cup sugar
  • 1 tablespoon light corn syrup
  • 1 teaspoon vanilla

I don't own one but saw these ingredients for a caramel corn ice cream on their site, it's really corn ice cream that you top with store bought caramel sauce. They also have a new model that uses 24 oz containers instead of 16 oz.
