Any tips on copycat for pizza rolls? I've tried several times and just can't get it right.

I think a key is the temperature of the oven, but even with a nice hot pizza oven I can't get the crispy outside/chewy inside that makes DD so good.

I used to work there a way long time ago… it might be worth asking if they'll sell you a dough ball. Roll it out, cut the dough like you're cutting a pizza. Each slice gets half a slice of provolone and 6 pepperonis. Roll them up and put them in the fridge for a few hours. Make sure to squeeze the air out before they go in the oven. Don't remember the exact time in the oven because I'd just throw them in and the belt would take them down.

They do. With so many people doing home pizzas (Oonis etc..) lotsa people buy the dough balls.

pizza dough (make your own - homemade is better, but I've used the pre-made packets)

I like to add garlic butter to the top of mine when baking.

Bake at like 375 for about 10 minutes, or until brown.

We had some Gumby's pizza rolls shipped. Not nearly as good as getting them fresh when I was in school. Which isn't a shock. Still far different than we'd hoped.

The problem is if you cook them according to the instructions, they look fantastic, but the dough in the middle is raw. At first you think "great, a lot of cheese!" then you realize it's just raw dough. We've tweaked cooking times/temps to try to find the sweet spot, but it has yet to be found.

Cook them through and they're pretty hard on the outside, with no discernible cheese inside. Almost takes like breadsticks w/a thin layer of pepperoni. Maybe that is how they are in the stores these days, but its not how they were in the mid/late 90's.

Are you talking about Gumby's pizza rolls?

If you're getting them frozen, I'd recommend thawing them completely and letting them come to room temperature, then bake at 400 for 10-15 minutes or until golden brown.

I'll give that a shot tonight. Their instructions said to cook from frozen but we've been changing it up anyway trying to find the sweet spot.

Made these tonight. I need to thin out the dough a little more. May have to stop hand stretching and just use a rolling pin.

400 for 17 minutes, they came out great.

Gumby's made pizza rolls? I thought they only made cardboard pizzas with sauce on it.

I haven't had them in a few years, but their pizza rolls were damn solid. I was partial to the meatball with peppers and onions.

DD's is 100x better than Gumby's. I haven't had Gumby's in a long time though.

Nah fam...

But really, I preferred the dough on Gumbys rolls over DD's. But I also have not had either in years. But Gumby's delivery at 2 am back in '01-'05 hit the spot!

DD's is 100x better than Gumby's. I haven't had Gumby's in a long time though.
gumby's doused their rolls with garlic butter, which gave them the lead for me.

Always thought DD's were too "doughy"
