Going to make these for Thanksgiving…what others would you suggest?

Old school Luby's style cream cheese/bacon stuffed jalapeños always does well.

A large vegetable and hummus platter is a new favorite for us.

Something more substantial would be chuck roast burnt ends.

I use older eggs that have been sitting in my fridge for at least 10-14 days for boiled eggs. They always peel so easily.

I also like to make a pepper jelly to pour over cream cheese and serve with crackers or toast. I will just get whatever fruits look good -- peaches, apricots, mangos -- and add a few habaneros to the recipe.

Always a big hit at work pot lucks.

The biggest issue that will lead to eggs being hard to peel is overcooking them. They only need 11 minutes in boiling water to cook. The problem with dropping them into boiling water is that it will cause the air underneath the shell to expand quickly and crack the egg, leaving you with streams of egg white in the water. The solution is to take a paring knife and stab a very tiny hole into the fat part of the bottom of the egg. That will allow the air to escape quickly. Plunge them into cold water to stop the cooking, and then crack them all over with the back of a spoon. Then peel them under a stream of running cold water. I've done this with very fresh eggs and have good success with peeling with few divots in the egg white. It's a persnickety process, but has a very high success rate.

Hear me out... Is it a dreaded unitasker? Yes. Has it singlehandedly changed our house's egg game? Yes.

We would have one Tiger Sauce and one of these at most parties, but more typical for us is Christmas Eve.

Edit to add that Fritos Scoops are the premium choice for its consumption.

I eat a lot of hard boiled eggs, probably 6-8 a week. Saw this video from J. Kenji and it has been a game changer. Of the hundreds of eggs I've made using this method, I've had maybe a dozen or so not peel perfectly.

Nice. I've been starting from cold and ice bathing for years, and my peel rate sucks.

Everyone is entitled to their own opinion, even when they are wrong.

On boiled eggs, if you have a Costco in your area you can buy them boiled and peeled. I've seen them at HEB and Kroger as well but a bit more expensive. I keep em around as good protein based snack when I'm hungry.

Probably going to go with some pork belly burnt ends in order to no have to be in the house during the craziness that will be the lead in from lunch to dinner. I will be smoking a turkey for dinner so might as well start early with something

This is one of the suggestions I had on the TG thread -- a fruit+habanero jelly over cream cheese with crackers -- my latest go-to for work potlucks.

I make something similar that has a bit of cinnamon but no balsamic reduction. They're always a hit.
