Blackstone griddle.....Christmas gift.

I am not a big griller or outdoor cook but wanting to get into more....hence I recieved a Blackstone as agift. My current gas grill is hooked up to gas line on patio. Questions
1) should I stick with the standard propane setup on Blackstone or get the conversion kit to hook up to gas?
2) if you have a similar griddle, what are a couple of your go to things to make?

Nice gift!

No input on fuel source, but I will say just using propane cylinders works fine for me.

We love to make Philly cheesesteaks and also smash burgers.

Converting to NG was the best thing I did.

Tonight I seared off the sous vide rib roast.

Anything that sears, cooks hot, etc goes on the griddle. I use the built in gas grill a few times a year, the smoker double that. The griddle every week.

2nd for the NG conversion. Just plain sucks to run out of propane in the middle of a cook, or even worrying about it. Swap the jets (i.e. use the conversion kit) and never look back.

I cooked bacon, french toast, and scrambled eggs this morning. Breakfast tacos are super easy. Stir fry, fajitas, burgers, and salmon are frequent requests.

This guy is a friend of mine and a good follow on Instagram. Inspiration for years of things to cook.

He started several years ago w/a Blackstone and he still uses one today. He later bought a pellet smoker and after a year or two became sponsored by Traeger.

His IG has a lot of BBQ now but he still does plenty of griddle stuff too.

He's a cop and just started doing this for fun, got addicted, and it has quickly spun into a revenue stream. No idea if/when it'll grow enough for him to 'retire' and focus only on cooking, but it's a pretty cool gig thus far.

Very straightforward, IIRC. Basically consists of unscrewing the existing propane-sized jets and swapping in the new NG-sized jets. I believe the new jet holes are larger b/c propane burns hotter, thus need more volume of NG. One word of caution- don't over tighten the jets, they're brass and will break. Not sure what your NG outlet/fitting looks like, but you may need an adapter to hook up to the Blackstone.
