This is my abuelo's recipe. It is "authentic".
5 cans carnation evaporated milk
9 large eggs
4 cups sugar- 1 cup for caramel bottom
Vanilla
You can add a couple of drops of yellow food coloring if you like but at is optional.
1) Mix 5 cans of milk, eggs, and 3 cups of sugar in large bowl. Add vanilla (a tad) for flavoring. A teaspoon?
2) Caramelize 1 cup of sugar in pan. Just put the sugar in a pan over medium heat until it melts and turns caramel brown in color. VERY CAREFULLY pour the caramelcese sugar pour into baking pans, then pour flan mix into pans. Place pans in larger pan with water, (Bain Marie).
3) Cook in oven at 300*F for 1 hour, may take longer cook till knife comes out clean.
Don't over beat the eggs mixture. Mix just to blend.
