I like using Ninfa's recipe

Ninfas fajitas

[ol]
  • 1 piece Zested Orange
  • 1/4 cup Freash Lemon Juice
  • 2 teaspoons Lemon Zest
  • 1/4 cup Water
  • 1/4 cup Pineapple Juice
  • 1/4 cup Soy Sauce
  • 1 clove Garlic Minced
  • 1 tablespoon Black Pepper
  • 2 pieces Dried Chiles de Arbol (Crushed)

From the other thread, so credit and a huge "thank you" to whoever posted it....

I use this and it is a hit every time

3 cups Pineapple Juice
2 cups soy sauce
1 cup water

2-2.5 hours if enough.

I love it when HEB has the Wagyu inside skirt steak. They usually do a pretty good job at trimming it.

I too use the standard 321 but I use much smaller quantities, but it is typically only 2 of us. I've also subbed lime instead of pineapple but I don't put nearly as much lime. It is probaly more of a 121 ratio if using lime.

Other things to consider -

  • Remove any excessive silverskin
  • Kill it many times over with a Jaccard tenderizer. That one is crazy but mine is old and only has 1 row of blades.
  • Cover in seran wrap and flatten out/even with a mallet

I like doing this to make it a more even cook and I don't have to marinate as long.

I also add bohlner's fajita seasoning and/or El Toro Red fajita seasoning before grilling.

This is my go to for marinating fajitas or steaks - this makes a bunch so I often half it if I'm not cooking for company:

1/3 C Soy Sauce
1/2 C or a little less of Olive Oil
1/3 C Lemon Juice
1/4 C Worcestershire Sauce
1.5 T Garlic Powder - use more if fresh
3 T Dried Basil - use more if fresh
1.5 t Dried Parsley - use more if fresh
1 t Black Pepper
1/4+ t Tabasco

Regardless of the recipe you use one recommendation I'll make is to add some sugar to the marinade. Skirt is a really thin piece of beef and it cooks quickly. Adding some sugar to the marinade can help in getting some char in a short period of time. It's the only time I can think of that I add sugar to a meat before grilling.
