Best fine greasy mexican chorizo.

How long do you want to ignore this user?
I've eaten chorizo at restarants for ages but now I want to start cooking with it. I figured the Michocana brand would be good but it was very chunky and not greasy at all.

What is the best brand if i want fine grain amd greasy. Do the restaurants use beef chorizo for their fine grained chorizo?

As a general rule, look at the list of ingredients. Choose the one that only contains meat and spices. For example the ingredients list will only have three or four items such as: pork, salt, spices.

As best you can avoid salivary glands and lymph nodes. Then try to avoid all the other fillers. Those artificial fillers may be the things that are giving it a texture you don't want.

Some stores only carry brands that contain salivary glands and lymph nodes. Often times the same brand will have different versions so don't assume brand x only contains or does not contain them.

And sometimes you're just craving breakfast tacos with chorizo, egg, and potato, so get what you can and enjoy it.

That's what my mother in law uses. Not a huge fan of chorizo, but that one has the least "vinegar" taste.

I really love Whataburger's chorizo. Wish they would sell it like they sell their breakfast sausage. Also a fan of Chorizo San Miguel. Always get the pork chorizo.

Thats a great chorizo, my US favorite. Great rec. But part of what makes it so good is that it isn't greasy. Based on the OP wanting greasy chorizo, the cheap in the tube brands are the way to go.

FWIW, years ago Chorizo de San Manuel supplied the La Michoacana stores in bulk for their meat market chorizo, don't know if they still do.

I got the La Michoacana tube. It was chunky like fine chopped and not fine ground. And not greasy.

HEB makes a fresh daily chorizo of just ground pork that's really good too. It's in the pork sectio of the meat market.

Chorizo San Luis is made by Chorizo de San Manuel but with a higher fat content than the original.

Chorizo de San Manuel made in Edinburg tx. I buy it at Walmart and HEB in Texas. It's excellent.

Here's my quick and easy homemade chorizo.

1lb ground pork
1tsp salt
1tsp pepper
1 Tbls Ancho chile powder
1 Tbls New Mexico chile powder
1.5 tsp ground Cumin
1-2 large cloves garlic-pressed
1 tsp oregano crushed between fingers
1 tsp ground cinnamon
1 Tbls white vinegar
1/4 c water

combine well in a bowl and put in the fridge overnight.

Thanks to this thread I picked up some Chorizo de San Manuel the other day. Just made some scrambled eggs with the chorizo & some cheese. Mighty tasty if I must say so myself.

This is the winner. I have a chorizo recipe that is almost 80 years old and it is very similar to this. The vinegar is key to making the chorizo flavor.

I grew up a few miles from San Manuel, TX and my Dad used to go buy chorizo from the San Manuel Store which sold it. It was made at a small meat processor across 186 from it.

Made my day when I could find it in a grocery store, I hadn't had good chorizo since leaving home.

Chorizo de San Manuel or if you want it a little greasier get the Chorizo de San Luis.

Damn good products with no BS soy fillers.
