I took my son on a tour of an oyster farm in California.

We learned a lot and I tried my first raw oyster.

I did a 4th of July where we rented a house on the Puget Sound. My BiL had a fishing license there which allowed you to collect like 24 a day or something like that. At low tide we'd just stroll along the beach and collect our daily allotment. Our preferred method of eating was lightly breaded and fried in garlic and olive oil with French bread. Amazing.

I love raw oysters. For really good ones, all I want on them is a few drops of lemon juice. I usually prefer Pacific to Atlantic for raw oysters, but I had some in Hilton Head a couple of weeks ago that might make me change my mind.

Had good experiences ordering online from Real Oyster Cult and Island Creek, but I've been picking up savage blondes (PEI) from central market and they are delicious.

Maine is the place for oysters. There is a farm on every river mouth and despite being the same species they all taste different. Even two sides of the same river will have different flavor profiles.

Buying and shucking oysters was something I never really considered until one day about 6 months ago, I got a wild hair to buy an oyster knife off of Amazon (about $8) and try my luck. After a 5 minute youtube video, I was shucking oysters with ease. For those that like chargrilled oysters, I highly recommend giving it a shot yourself.

Not sure they would qualify as good oysters, but the Randall's by my house has gulf oysters for $0.79/each pretty much all the time. I'm not comfortable eating them raw, but I'm just fine with chargrilled oysters for $10/dozen.

Eating a raw oyster is like swallowing a big loogie.

Anyone think that a raw oyster can be too big? We had raw oysters two weeks ago and they were huge and ate terribly. The texture was bad and they were so big you really had to chew.

When I lived in NOLA, a bar I frequented used to give away free oysters on Wednesday night. One night, I got the biggest oyster I've ever seen. Shell was bigger than my hand and when I tried to eat it, the oyster literally went from cheek to cheek. Ended up spitting it in the trash. Just too much.
