As the title says, what is your favorite non-traditional BBQ side?

With the offerings that some of the top BBQ restaurants have these days, it has me curious.

So it isn't non-traditional in east Texas, but one thing I don't seem to see elsewhere is dirty rice. I'm a huge fan of that as a bbq side but it's not traditional in most places.

Not sure if grits are considered in this group but the grits at Goldee's are by far the best I've ever had.

To me, non-traditional means you would be surprised to find it on the menu if you walked in a random BBQ joint. It could be something only your family does or something you have only found at one or two BBQ restaurants.

Dirty rice and grits both fit that bill for me.

Agree with Blood Bros fried rice. Still though, carrot soufle from Tejas is my favorite.

Tell me more about this carrot souffl. I hate carrots but have been wanting to find a way to cook them that I'll enjoy. How much does it taste like carrots?

Not savory but not a dessert either. Hard to describe but I think it eats as a better sweet potato or butternut squash.

Had some at Troubadour Festival and it was great! Took me a minute to figure out what it was cuz at looked like and kinda tasted like like sweet potatoes. Would like to get the recipe for that.

Kenny and Ziggy's has a carrot souffle as well and it's awesome. I love the dish. If it's done on a smoker it can only get better, I'd guess. Will have to try it at Tejas.

Lisa Fain/homesick Texan has a version based I believe originally from Picadilly Cafe Houston but reintroduced by Tejas. I use less of the warming spices than her recipe... regardless, mine does not compare to Tejas.

My grandfather would smoke a brisket and chickens, and my grandmother would make okra gumbo, new potatoes peeled and boiled, and then she would soak them in a cream sauce she made, pickled mushrooms, and of course bacon baked beans, deviled eggs, and monkey bread. ....Man I sure do miss them !!! No matter what I do, mine never taste quiet as good as theirs did !!!

Charro or borracho over some dipshht who talks about their mother's baked beans and it's just a can of bush's baked beans in a casserole dish with sliced bacon on top. My God, most bbq in the deep south is fcking trash and the sides are worse. Every now and then you can stumble on something (like a good unique grits or slaw etc) but the average place is like a generic ass craptacular church social.
