Anyone have video of the worst brisket trim of all time where the guy is scraping all the fat off the top of the flat and slicing? I've searched on google but can't find it. Really want to send to my buddy to let him know he's not the only one to **** up a brisket on a friday night!

I had never seen this. I was getting real physical anxiety just watching this guy. To top it all off the brisket looks dry as hell.

I have told this story before. When I was growing up I worked a pit and cut meat for a chain called Gabby's BBQ and for Luther's. This was back in the 80s.

This is how we were taught to trim and slice a brisket back then.

No one wanted fat at all and almost no one ate the fatty top (what we called the "lifter" since you lifted it off the flat). That all went to chopped beef Sammie's.

Times have changed.

When you go to Spring Creek BBQ, they still trim like this. But they got good rolls.

Agree. Having grown up in the heart of the original BBQ belt 60 years ago, fatty brisket was considered trash meat. Brisket was supposed to be lean. When the current fad started 15 years or so ago, I was confused by the people asking for fatty brisket.

Made me think of the year I lived in Tampa. While there were a few acceptable barbecue joints, there was one whos "brisket" came out as this pile of very thinly sliced, roast beef appearing meat. Ugh.

Otto's in Allen Center is the only walkable BBQ for me downtown, and they do that to the brisket. It was never that great anyway, but that trim makes it a disaster. They do okay on sausage and chicken, but otherwise I stick to the burger side. I tried Citadel once and wow was it terrible.

I know that Pappa's gets a bad rap here, but the Smith location was a decent walkable option for moist brisket and ribs when it was open. F'ing COVID shut it down so now there is nothing.
