I'm smoking a turkey breast for a friend who's taking it up to his mother in the country the Saturday after thanksgiving. I will see this friend on thanksgiving day. Plan:

Wednesday: smoke turkey breast, chill in fridge over night.
Thursday: vacuum seal and give to friend. Eat dinner, have a cocktail, enjoy family
Saturday: friend goes to the country to see mom.

Now do I tell this friends (who's not much of a cook) how to reheat this whole Turkey breast that won't annihilate it?

I'm thinking boil in the vac seal bag? But how long? Other ideas?

I just did this yesterday. Smoked 2 5lb breasts on Thursday, then cooled and vac sealed. Tossed both bags in a pot of 146 degree water about 2.5 hours - came out perfect. I was estimating needing about 45 minutes per inch of thickness.

Sous vide? That's a precise temp! My friend surely will not have that kind of precision at their fingertips.

Depending on thickness of the breast you can also tell him to bring pot of water to a boil then drop bag in pot and turn off stove. Put lid on pot and it will be good in an hour or so (depending on thickness of breast). If really thick breast the boil for 5 minutes then turn off water. This is how people who don't have sous vide heat up bbq that I vac seal for them.

First thing is don't slice it. You can also wrap it in foil and re-warm it in a 200-250 degree oven. Another alternative is to slice it and heat it in a microwave on ten second bursts, flipping the pieces until they are warm.

Nope! Wasn't gonna slice it. That's a sure way to let it dry out.

Whether you seal in vacuum bag or wrap in foil, add butter.

Now I finish my turkey breasts in butter to begin with. Should seal with butter too?

When the food is at the exact point that you would want to serve it, put all of it in the vac bag and throw in the freezer. Then when the butter (and other meat juice goodies) solidify, vac seal them. That way when they heat up in the bag it's very close to how you would have served it. EDIT: So hell yes put the butter in the bag!
