i end up making my own for enchiladas. I do 50/50 corn/flour. Good mix of flavor while not falling apart when you roll. Though I soften in oil anyway to prevent them from breaking, even if i use store bought. But I ended up doing this b/c I have to make mexican/texmex food for the in-laws when I'm up north and the selection of tortillas at the grocery store is garbage. Its not that hard to make them and the kids like to help, so I started doing it at here in texas for enchiladas as well.

I typically make enchiladas with fresh homemade corn tortillas. If they're fresh I don't find that they need any softening to be pliable enough not to break.

I can find the Land O Lakes at Restaurant Depot but I have a Sam's club close to the house.

I use this for queso and enchiladas. I use a mix of it and shredded cheddar for Mac n Cheese

Dayum. Can pickup any day! LOL. I have never made homemade tortillas but wil look this up. I have to semi-fry them to make them plyable for enchiladas. Thats half the work.

With a good press it's easier and way less mess to make them yourself. And they are so much better. I have one of those cheap cast presses and it isn't great but it works. After a friend's mom brought me a real deal press back from Mexico it got a lot easier. That thing is probably 25 pounds of mesquite.

Nice. I have a cast press that I've used the hell out of. Works just fine, but I bet that thing is great.

For a last minute dinner last night, we decided to do enchiladas because we already had grilled chicken, but we didn't want to make a big pyrex dish, just a few and we recalled the parchment paper thing someone had posted. I looked on the "what's cooking" thread, did forum search, but ultimately typed something like "enchiladas parchment paper youtube" because I remember there was a good video of it. Search results maybe six links down was Texags this thread. They are so good this way.

Was in San Antonio for the weekend and popped into the Blanco Cafe on Blanco Road for a nice Saturday lunch. I love their cheese enchiladas and had them throw on an additional puffy taco just to try. Love that place!

What do you boys want for breakfast BBQ ?.....OK Chili.

Enchiladas tonight! I'll likely do the chili broth and sauce this morning, and do them "stacked" jjst for sh#ts and giggles.
