I dont think it's so much about food costs as it is about trying to serve something different or special vs what they normally serve at their restaurants. It would be really boring if everybody was serving the same thing and you tried 40 different samples of brisket, it's not set up to be competition-like where you compare between places. I think you went in with misguided expectations.
I went to the TX Monthly event a couple of years ago and have been to Troubadour Festival here in Aggie park twice and really like the setup. You get to try some crazy/exotic products these guys whip up and it's all so very different than if you visited each of their physical locations. There's a lot more to bbq than just brisket, ribs, and sausage.
