Pro tip…old oxidized vermouth is a great substitute with sauted mushrooms.

Burgundian cooking is generally pretty basic. If the recipe is much more than mushrooms, wine, stock, garlic, thyme, butter, and maybe mustard, then it's probably a bad adaptation.
