Healthy salad dressings?

Trying to eat better. I'm not a fan of vegetables, so this is a challenge for me. Usually have spinach and a lettuce mix. Olives and tomatoes. Been going with balsamic vinegar and olive oil - but that's getting old. Just want natural, no seed oils.

Ideas?

I'm not sure if there is one. I just use a vinegar of choice with lime juice. You can get alit if flavor with garlic and onion powders. Dijon mustard can go a long way, just cut it with vinegar or water. There are so many combinations of seasonings even a ranch powder. Then you have bacon but not too much. I know you said no seed but a little sunflower seed is tasty. If you whip up an avocado that makes a great dressing full of flavor. You don't have to drench to have a delicious salad. I once thought that was impossible.

Not exactly the solution you're looking for, but just to mix it up on occasion and break the monotony, it doesn't hurt to have a dressing you like and just be mindful of the portion you're using.

I use the following vinaigrette for grilled or blanched asparagus. Would also be good on salads.

Combine:
2 Tbs lemon juice
1/2 Tbs Dijon mustard
1/2 Tbs honey
1 sm. clove garlic, minced or pressed
1/2 cup EVOO

Combine all the ingredients in a bowl except the oil.
Slowly whisk in the oil to emulsify.

If you have a Vitamix, you can make really good vinaigrettes with nuts, water, Dijon, vinegar, and herbs if desired. I don't measure. Just toss a handful of nuts into the blender. Add water to about 3/4 of the way up. Add vinegar, a big scoop of Dijon, s&p, herbs if desired and blend on turbo adding water if needed.

Creamy dressings can be made with yogurt & skip the mayo. You can also add soaked raw cashews and water in the Vitamix for cashew cream. Mix with the yogurt for a creamier flavor. Blended Avocoado and yogurt accomplishes the same if you don't mind green ranch.

No problem, I've been in your shoes before. Just remember it's a marathon, not a sprint - if you make yourself miserable and totally remove all the foods you enjoy from your life, the habits won't stick.

Sometimes you need to eat a cookie, just maybe not five.
