No one thing makes savory food better than MSG. It's soooo good. The question though is whether adding it is cheating.

I used to work with a girl who would order no msg at Chinese restaurants because of her supposed "allergy". She'd mow down Chick fil A no problem

I wonder if my taste buds just don't pick up MSG like others. I find it adds minimal improvement to most things I add it too. Maybe I'm not adding enough, but other people seem to notice a difference when they add similar amounts.

But no, do not think it is cheating. Unless you're entering a cooking competition and it is explicitly banned but you sneak it in?

Fair enough… intolerance I guess is the appropriate word.
It only effects about 1-in-12,000 people. Thats only around 30,000 people in all of America. And even that "intolerance" only has minor effects.

Agree, Mom is allergic to MSG. Was at a Chinese restaurant and made it very clear to not put any MSG in the dish. Either way she had a reaction and it was bad enough that we had to call for an ambulance. Could have been from the preparation of another dish or bad communication but it happened. Only allergy that she has.

The thing is, MSG is in so many things beyond Chinese food.

Doritos
Campbells Chicken Noodle Soup
Chickfila
KFC
McDonald's (basically any fast food joint)
Ketchup
Salad dressings
Tomatoes
Cheeses (like cheddar, parm, etc.)
Pepperoni

All of those contain various levels of MSG. If someone had a true allergy to it, they would also likely react to those foods. It's possible that people are sensitive, but I'd wager a lot of reactions are psychosomatic or due to things like increased sodium intake.

I don't use MSG in cooking but I'm sure it is in some of the store bought bottled sauces I have.

What am I missing out on, what do y'all put it on that enhances beyond just salt or other spices?

People always looking for MSG on labels don't know that MSG has countless names so if they see these, it has MSG

MSG (monosodium glutamate) can also be referred to as "sodium glutamate," "L-glutamic acid," "monosodium salt," "monohydrate," "Ajinomoto," or "hydrolyzed protein". It may also be listed as "natural flavor(s)" or "yeast extract" on food labels

You can also just buy it in the spice section of your grocery store under the brand name Accent. I use it in some homemade spice mixes. Greatness.
