What makes great chicken and waffles?

I've got a craving for chicken and waffles, and I figure an 11 am kickoff time this weekend is a perfect time to make them. Is there a secret to making this combination extraordinary? Extra salt on the chicken? Add something to the syrup?

if your near CS go to mess waffles and get some. Had some a couple weeks ago and there chicken was crispy, hot, fresh, and had some spice. It was a great tender. Waffle was big and fluffy.

Chicken and waffles is one of those things that sounds great at home until you realize all the work involved. Doing it while bleary-eyed in the morning makes it worse.

I wouldn't go to the effort of making chicken and waffles, but of the best ones I've had the secret is the waffle. There was a place by our house that made great chicken and waffles, and it was a pearl sugar (Liege) waffle. The chicken was solid but the reason I miss that place is the waffles were so good. They're more dense and chewy, but also have a crunch from the sugar in the waffle. Most places make boring waffles, regardless of how good the chicken is.

Well, I'm gonna take everyone's advice and just go out to eat on Saturday morning. The kids will be at my parents, so the wife and I will go give Mess Waffles a shot before the game.

To me conceptually its the same as like, general tso's chicken or something similar. Crunchy, little spicy, little sweet.

Chick fil a is gonna test market chicken and waffle sandwiches in SA and Baltimore.

We make them at home for dinner on weekends sometime and use this waffle recipe. I agree that it's too much work in the morning, but it's a nice excuse to drink champagne.

I've had them once, and I would echo this sentiment. They weren't anything mind blowing. I just happen to have a major craving for them at the moment. I eat really healthy during the week, and I've just got it in my head that I HAVE to have chicken and waffles this weekend. Must be something in there my body is craving (carbs, sugar, and fat).

Sounds like some of you have had some bad chicken and waffles.

A deboned buttermilk marinated and double dipped thigh (not some dried out chicken tender), with a light Nashville hot dip and coat. Not crazy hot, but with a little bite.

A waffle with crunch. If you are making a flabby waffle it's a bad dish. Add some herbs like chives to the batter. The waffle needs deep pockets to hold a real maple syrup and a maple or honey butter. The butter can have a little of the chicken dry rub for kick.

Ended up just making it myself. Used chicken thighs and did a spicy honey butter instead of syrup. Money.

My favorite part is how he intentionally made a sauce mark in the bottom right as a watermark for the photo, so we know it is authentic.

The secret is incredible waffles starts with incredible cornmeal.

This is from a former/retired MS State Senator. He barn found an old stone mill and restored it. Best damn cornmeal I've ever had. The phone number is disconnected but he is still making cornmeal. I've got 50lb coming to Texas in December.


Makes the best hush puppies I've ever had too. And my family is from MS, so I've had every hush puppy variant imaginable.

I'm not sure I've actually ever had a waffle with cornmeal in them. Sounds intriguing. Does it also make for a dense waffle?

There's a place around me called Waffle Love that I believe uses a type of "Liege waffle" recipe - anyone tried those? That type of waffle (the ones at Waffle Love are very dense) goes great with chicken IMO.

Everything varies by the ratio of cornmeal. You can put cornbread mix in a waffle iron (typically >50% cornmeal) and it will produce a cornbread waffle. A savory waffle I might start with 20% by weight cornmeal. When I make blueberry/pecan waffles, I always add cornmeal to the mix.

You leave it right there, it functions as a legit watermark.

No image site can 'borrow' your pic for someone to steal later, because no one is going to use a picture with some spilled butter. It's perfect!

I wouldn't describe them as dense at all. I think the recipe I use is ~50/50 with flour.
