The rules are fairly simple so I'm sure there's a good video out there. Olympic volleyball plays using international rules but I don't know if they are all that different. I think one of the big ones are the number of substitutions you can have per set. International has a lot less (I don't know the numbers) so players have to be more well rounded and not one-trick in order to stay in the rotation longer. Probably some libero rule differences.
Player positions are pretty much as you learned it in school as you have 6 players and you rotate around. They have to be in their position at the start of the point but can move around afterwards. The one caveat is if you start in the back row, you can't attack above the top of the net if you take off from in front of the 10 ft line. So a hitter that is on the back row can attack but they jump before they reach the 10ft line. For setters, if their starting position is in the back row, they can't "attack" if, for instance, a pass is too tight. They can't jump and pop the ball over to the other side as that constitutes an attack.
Before the serve, the players do look like they are lined up all over the place seemingly random but they are all by rule still in their start positions though it may not look like it.
