There was a BBC reality show called Spy (2004) where they took wannabe spy contestants and put them through real training based on CIA and Mi6 techniques. It was pretty darned good.

The Americans is #3 on my list of best shows. BB is #1 and the Wire is #2. I definitely would suggest it.

Turn is a solid show, and it takes place during the Revolution so you see the spycraft during that era. It really clouds the Patriots vs Redcoats morality that you often see from media about that era. In fact some of my favorite characters were on the British side. Major Hewlett and Major Andre being prime examples.
