Which movies best encapsulate the "south" for you? By and away for me, it's Smokey and the Bandit. I think it perfectly gives the feel of the south in the late 70s early 80s.

I thought the movie was about Waco?

Edit: Just looked it up, it's based off a true story about a town in OK, but this site mentions the dancing ban in Waco that lasted until the 90's as well.

This is a fair take.

Similarly I would not consider fandango a southern movie.
