Hot Tub Time Machine when they are finished skiing after they arrive in the 80s. Someone in the background says "I want my two dollars". For those who don't know, that's a reference to an 80s movie with John Cusak called Better off Dead which also happens to have skiing.

So this a more recent example, but Paws of Fury is basically the plot of Blazing Saddles with the 'ninja' dog playing the role of the 'sheriff'. Mel Brooks voices one of the characters. There's even a 'Mongo'. Lots of subtle references to the original that goes above the heads of the kid audience. Very well done.

When John Lithgow says he wants a hot dog at the baseball game in Interstellar. Pretty sure that's a reference to a conversation his character has in the movie 2010.

And I do believe he said something about not being able to get a good hot dog at the Astrodome, but Yankee Stadium was a great place for a great dog (in 2010).

Not a movie, but there are a couple of episodes of King of Queens that has Ray Romano playing his Everybody Loves Raymond character (one of which has his wife from the show). Always thought that was pretty cool.
