I personally know 3 seperate people that went to Europe for 2 weeks last summer. All of them returned saying they didn't gain a pound after eating bread and pastries the whole time.

Also, olive oil is more meant for using at room temperature, as heating it can bring out more Omega 6, which is inflammatory. Also, you want cold pressed. Avocado oil or coconut oil are better for cooking with. Or use beef tallow, lard, or ghee (clarified butter). Or you can just use a small pat of butter if cooking at low enough temperatures to not burn it.
It is high in Omega 6, so it's a "no go", for me. Can't tell you that, as i've never cooked a goose or used the fat. Duck fat just imparts a wonderful flavor to potatoes. How does it compare to goose fat? We cooked a goose for Christm one year, and the amount of fat that came from it was immense.
