I switched over to using tallow as my primary cooking oil. Food tastes better. Hell, i fried my thanksgiving turkeys in beef tallow this year and I won't be going back to cotton seed or peanut oil again.

Also - tallow doesn't go rancid. Neither does lard. It can be used over and over and over again for just about ever without any issue.

And if you really want to up your game - render your own beef tallow on the smoker when you throw a brisket or tri-tip on there. Smoked beef tallow is amazing.

Tallow, lard, real butter - all are actually good for you. In moderation, just like anything else. Things that aren't particularly good for you - margarine, seed oils, sugar, highly processed food. Basically everything we have been taught about food since about 1970 has been absolutely and utterly wrong.

Olive oil is one of the better oils, but using a spray, make sure it ONLY contains olive oil. If it has been heated at any time during extraction, it will have more Omega 6.

Avocado oil or coconut oil are better for cooking with. Or use beef tallow, lard, or ghee (clarified butter). Or you can just use a small pat of butter if cooking at low enough temperatures to not burn it.
Even if you buy bottle olive oil, unfortunately there is no standard here that requires manufacturers/bottlers to actually state on the label that it is 100% olive oil or not. So a whole lot of the "olive" oils out there on store shelves contain a pretty high percentage of other oils, which is crap to me.

I want to say that in places like Greece, Italy, Spain, etc. they are required to have accurate information on thigs like this on the labels. I might be wrong on that but pretty positive I've read that a few times here and there.

If you google "fake olive oil" you'll get a few thousand articles about it. It is amazing that we can't get a whiskey approved for sale without a year review by the FDA on the label, but things like this don't even register on their radar.

The food pyramid with its too heavy emphasis on plant-based carbohydrates has led to the obesity epidemic in this country and an entire generation thinking that grains are good to overeat on.

How does it compare to goose fat? We cooked a goose for Christm one year, and the amount of fat that came from it was immense.
Goose and duck fat are pretty interchangeable for the type of cooking using them. Goose is a bit stronger and I prefer it. That goose fat you got from cooking the goose is amazing and it freezes well so don't hesitate to store it in the freezer for later.

I would actually say that the majority of people in this country pay little to no regard to any sort of food pyramid and just eat too much fast food/restaurant/takeout/packaged foods.

It really is that simple IMO. The food pyramid literally went out the window. Heart patients do great on low fat high complex carb diets if they stick to a plan. Adkins people do great if you stick to a plan.

80% of Americans don't want to make the commitment in either direction.

All true. Tallow can be cleaned by reheating and straining out anything leftover. It's super convenient.

Beshear won his first term against a wildly unpopular Republican who went out of his way to piss off pretty much everyone he could. Then he tried to burn it down on his way out the door like Biden did, including pardons. Beshear is also the son of popular former governor (2007-2015) and that does tend to help, and he ran as a "moderate."

The Republican who challenged Beshear in the 2023 election, Daniel Cameron, got nuked by the abortion issue.

Beshear will be term limited out in 2027.
