Their culture encourages fresh shopping every day or two because their kitchens are tiny. Tiny fridges, tiny ovens (if they even have one at all) and zero storage such as a pantry. People just don't eat at home that much in urban areas.
By contrast, go to smallish town in Italy and it won't support many restaurants, if any, because everyone cooks at home for family and friends. Larger better equipped kitchens.
