Yellow (Bullhead) catfish any good to eat?

They would be about like any other catfish from that body of water. I've eaten a couple of large yellow bullhead before. At that size their diet is similar to that of a channel or blue cat of similar size.

I do not recommend.

I accidentally cleaned and fried one one time because it looked more like a channel than a mudcat..... except for the big head. It was nasty.

In my experience they taste as muddy as the water you caught them from. We sometimes would put them in a water trough at the ranch to let them "clean out" for a few days and then cook them up and they weren't terrible that way.

However, trying to cook them straight out of muddy water is a bad idea.

Yellow bullhead are one of about three species of bullhead catfish Texans generally refer to as mudcats. Sooo he's talking about mudcats.

If you are eating anything out of the Brazos or body of water fed from it, I don't think there is a whole lot of room to be picky about the fish.

I've never had a catfish from it that didn't taste like dead bear ass. I'd throw it all back and enjoy the trip.

We used to eat yellow bellied catfish (I guess they're mud cats) taken from creeks around Brenham all the time when I was a kid. I don't remember them being bad at all, but then again who knows. I say try 'em.

I don't care what water it came from, remove all the fat and red from any catfish filet and it will taste just fine. Most nasty tasting fish, regardless of species, is a result of the guy behind the knife not trimming it. Some species it's less important and that's why they get such a high reputation as being better (crappie, snapper, etc). Get in the habit of doing it on all fish, and you're always good.

Neither one of my granddads were particularly picky about cooking up pretty much any legal fish.

Considering my favorite fish ever was a gar out of a Rio Grande irrigation ditch near Granjeno, I may not be the best judge on this matter.

I'm with you on gar... they taste great probably my favorite freshwater fish. But I think cobia is the best Texas fish I've ever had and golden tilefish overall or maybe fresh caught yellowfin tuna steak, but tuna steak is kind of its own thing.

As posted above, removing the blood line makes a huge difference in the flavor of the fish.

Soak in Tabasco for a few hours, batter, dip, fry, enjoy. You don't taste the Tabasco

The stock tank at my house became overloaded with mudcats,,,we caught over a 100 one year, kept many of the larger ones. Tasted delish cooked up like any other catfish. Pond water quality was typical semi-murky, not real muddy.

Bleed them for 3 hrs, filet and be sure to remove all the colored meat. Soak on ice for 6 days in a brine of sea salt and baking soda. Then soak them in milk and Cholula for a day or two. Wrap the filets in bacon, put in the fridge a day or two before cooking. The day of the fry, get them out of the fridge and carry them straight to the trash. Go to H-E-B and spend a few bucks on a real fish.

They were fine where I grew up - clear water, gravel/rock bottom. The 6 inchers were good yellow cat bait on drop hooks.
