Yellow (Bullhead) catfish any good to eat?

I just ate four sizable bullhead catfish out of Lake Woodlands. They tasted good fried with typical catfish prep and an overnight soak in milk and hot sauce. Do not confuse bullhead and flathead. They are both called yellow cats or mud cats and are not the same. Both ok to eat.

Biggest "pollywog" I ever saw weighed 4 pounds. Most weighed less than a pound, and I have been "finned" by them more than any other catfish due to their small size.

Biggest "yellow cat" I ever saw weighed almost 100 pounds.

It is a curious thing how good tasting gar is. I was shocked the first time I had it. I remember in the 80s you would see the gar fisherman selling gar on the side the road in Mex, and I even saw some folks that sold it in the states, usually along the military highway.

Can't believe you know where Granjeño is. I understand the river fishes well in that area.

Pollywogs, aka mudcats. They make fair yellow at bait, but nothing like channel cats.

Lake Woodlands is reasonably clean water from a turbidity standpoint . Probably got its share of lawn chemicals tho.

In my years working ETx lakes we caught a slew of Yellow and Black Bullheads. They can fin the crap out of you while taking them out of a gill net. We clipped the spines with wire cutters. Those ETx trotliners love them for bait. As others have said, Flatheads love them. We used to recommend that if you had a pond loaded with bullheads just put in a couple of Flathead Catfish. Here in the hill country Flathead Catfish (the official American Fisheries Society name) are known as Yellow Cat and in ETx most people call them Opelousa or "Op's", as in Louisiana. ,
