Interesting question. For undergrads, the rule of thumb is, you are the "Class of XX" where XX is the year you would graduate if you completed your degree in four years. I started school in the fall of '84 and therefore choose to be class of '88. However, when you are ordering your ring, if you did not actually complete your classes until a later year, you could choose that year instead. So if I had graduated in the Spring of '90 for example, I could have elected to put that on my ring. I believe the vast majority of students choose the first option.
I assume you were working towards a Masters or PHD, which also qualifies you for an Aggie Ring assume you complete the requisite number of hours. I would say you could follow the above formula, substituting the year you should have graduated from your program, however long that would have taken.
Pick whichever class you feel more a part of.
