I think when you're the best at what you do (or just completely confident in your own skill level), you don't worry about what others think. Another way of looking at it is how amazing does the pitmaster at that Giddings restaurant feel knowing that Miss Tootsie considers their 'cue worthy enough of having lunch there?
I watched the
Really Dough? show on YouTube, and one of the awesome things about the show is seeing various pizzaiolos absolutely light up when Mark Iacono tells them how delicious their food is. Imagine having your idol or someone you look up to in your passion or vocation come in and tell you how great what you're doing is, it has to be an incredible feeling.
