Personal preference is beans in chili. Have had great chili with and without beans.

The Americas are no place for purists when it comes to food.

Not mentioned on here are "enchiladas", true mexican enchiladas contain no meat of any kind, they are tortillas dredged through chili sauce, sin carne, and served with crumbled white cheese. Some recent variations are the chicken ones in salsa verde and the like, but those are not traditional/common ones.

The ladies that sell lunch plates at our facility in Mexico sell "enchiladas Americanas" plates once a week or so, which are texmex yellow cheese enchiladas. Otherwise they sell true enchilada plates, and there are several varieties but no meat.

Just like there are varieties of chili. And for the record chicken fajitas is straight up heresy.

Both actually, the rolled ones are dryer and sold in brown paper, similar to a fluata or rolled up taco. The ones that are flat usually have a slight cheese filling or a potato/onion/pepper hash filling and are wetter with sauce.

I like both types, but the rolled dryer ones, when done with queso fresco and a true spicy sauce, I like a little better.

Yeah. I grew up around my referenced great grandparents. They were Czech. My grandparents were in turn Czech and also spoke it. I didn't coin "kolache" and I'm not arguing that I am personally Czech. I'm speaking on my family. Once again, I was explaining the CONTEXT of where my understanding came from. I asked you to explain where I was wrong, but instead you focus on me.

These were the words my family used. I'm not arguing if a food is authentic. We're talking descriptors and how in this region of Texas, it's completely changed. I asked how you can say I'm 100% wrong and explained the basis of my belief.

And if you want to further argue semantics, I'm only 3 generations removed from my great grandparents, not 4. Check your math.

It seems you don't even understand what you're arguing and just want to lash out. I hope you got some rest and woke up less miserable.

Good grief…. Move along already. Everyone is free to their opinion, right or wrong. It affects you in no way what someone on the internet calls a piece of meat inside bread!

I love how half the responses on here bust balls about "X" (insert your great great grammy's ethnic dish), but then literally at the end of their rant say that someone else's rant about "Y", (shrimp fajitas, chicken enchiladas, bar of cream cheese with Pace, or Welch's jelly on top is a Mexican appetizer/ dessert (ok, nobody said that one)) is just stupid because they don't care about that one.

It's food, that you put in your mouth. If it tastes good, who gives a crap what you want to call it!

Having spent a lot of Christmases and Thanksgivings in Latin America, I have experienced another, what I consider to be, major food faux pa. A lot of, and I think the majority from what I have experienced, people in Latin America put ground beef into the stuffing for a turkey. My wife's grandmother did it, and i had to endure that for several thanksgivings. Drives me crazy and I can't stand it.

I have cut loose and let my displeasure be known several times about the "picadillo" stuffing. But there are loads of people who to them, dressing or stuffing, has ground beef as the main ingredient. I made it a point to always carry several boxes of Stove Top back in case of emergencies.

Regional and personal tastes are all varied, it is fun and interesting to embrace the differences (except for chicken fajitas and ground beef thanksgiving turkey stuffing, on those I draw the line).

When living in Central America I would use the local small red beans in chili that I made and grew to prefer them, as they stay very firm when cooked. Those that ate my chili loved it, and I am no chili master. The far and away crowd favorite was Frito Pie, when we could get decent cheddar which was not a given.

Ya'll should try smoking a pork butt with Mango tree wood some time, definitely interesting and complicated to do.

I agree and laughed at most of your post as my wife grew up in a Latin Latin house (and by that I mean her Mom was born in Cuba and they spoke predominantly Spanish in her house).

However then I got to this line… and I realized this is flipping amateur hour too.

Nahh, not really all that serious. It's just fun to stir the pot, to make a pun.

Couldn't opine on a pizza much - only to say that anybody that puts fuggin pineapple on one deserves to be flayed and stuffed with straw as punishment. A good pizza is a damned fine dish though. NY style is better than Chicago style IMO because it puts more emphasis on the toppings instead of a mass of bread for crust.

Po-boys are pretty simple, but also easily effed up if you try to get too fancy or don't know what debris style is with roast beef.

Lobster rolls are some yankee thing, I'll defer to them on that.

I had to look up callaloo, didn't even know what that was.

As far as the okra part, there isn't enough space on this page to display the appropriate number of eye rolls for this comment. Go ahead and tell us that gumbo literally means okra and become the exact guy referred to in the list with kolache guy, fajita guy, etc.
I suppose you could argue that file can be used in lieu of okra, but historically file was only used out of season, and as soon as the art/practice of preserving okra (drying, freezing, etc.) became the norm, the use of file as a thickening agent diminished significantly.

I use file in my gumbo sometimes, but for flavor and not thickening.

Bottom line - you don't have a roux, you don't have gumbo. Small amount of leeway on the okra, I'll concede that. Kind of. But you'll also be hard pressed to find any gumbo anywhere that doesn't have okra as a primary ingredient.

Gumbo doesn't mean okra....but it's pretty much universally agreed that the name derives from the west african and french pronunciations of okra. You may not like that, but it is what it is.

It's funny....those that want to point out that somebody is "that guy" work so hard to not be "that guy" that they end up being "that guy" in just a different way.

The Cuban's have a little version of food disagreements as well. "Ropa vieja" being one of them, with different styles and ingredients and people complaining about it. "Lechon' is another one.

I had to scroll back to top of page to remember what the heck this thread was about, Lmao.

So back on the chili topic. I have been too some places(events) where they dice up potatoes real small and add to the chili. Anyone else ver encountered this? I know it was most likely used as a filler, but was really strange to me.

I know what you are saying… but not the same thing as those other 4. Craft beer guy might be condescending about your beer choice… but I've never met one who when you order a beer they don't like then say 'that's not a beer'.

Craft beer dork condescends because he thinks he knows best so he wants to order and recommend to everybody. He wants to be the sommelier. Chili, gumbo, fajita and kolache dorks do it just to sound smarter than they really are.
