The tomato sandwich is a Deep South thing, I think. My grandparents on my mom's side lived in rural Virginia, in a house on the coast of the York River, which feeds into the Chesapeake. We would spend a few weeks there every summer. One of my memories is going out on the river with my grandfather to pull crab traps, and then eating lots and lots of crab cakes. Another was tomato sandwiches, with tomatoes grown in my grandmother's garden. Toasted bread, tomato, mayo, lettuce. The whole point was self sufficiency, eating what you can grow/catch yourself. They were raised in the Depression, which I assume impacted how they lived.
Tomato sandwiches are fine, but yeah, now I think bacon makes them better. Because I'm spoiled.
