I want to make up some fresh pico de gallo and am curious what the favorite recipes are on this board.

Classic pico isn't so much a recipe as a technique and your preference. Start with about 5-6 peeled and seeded Roma tomatoes, 1/2 white onion, 2-4 peppers, 1/2c cilantro, and 1 lime. You can adjust proportions to your taste by adding more onion and pepper if necessary.

I like to add mango if I'm eating it with chicken, pork, or seafood

Rinse the onion. That will cut down on the pungency. After that, it's add things, taste and adjust.

I like to drain the tomatoes well after chopping in a wire mesh colander or similar to keep it from getting too watery. Agree with washing the onions, learned that from Rick Bayliss.

This. I'm not a fan of raw onion but if you rinse the onion after chopping it's way more palatable. Just put it in a strainer and run cold water over it for a few seconds, that's all it takes.

I've never thought of pico as needing a "recipe." Tomatoes, onion, serrano/jalapeno, cilantro, lime. Not really rocket surgery.

Cut down the sides of the onion from the top. Don't cut the core. This cuts down on eyes watering.
I know a lot about a little, and a little about a lot.
