For me, I think The Sixth Sense is the best twist because when you watch it again a second time, you can see the whole thing is right in front of your face the whole time, but no one ever figures it out. So many twists come from the unreliable narrator trope, but I feel like that's often a cheap trick. I like that The Sixth Sense doesn't use that ploy. It's more of a, "Hidden in plain sight." On a second watching, you definitely get a "How did I not figure this out" feeling?
