Derek and the Dominos, though Bell Bottom Blues was a minor hit.

Sturgill Simpson does a good cover of this.
Weird experience the first time I heard it because I didn't recognize it was a cover of this at first (and it took until the chorus until it finally clicked what song it was). But after about 2 lines, I clearly knew the words. I was very baffled for about 20 seconds as to how I knew every word to a song I'd never heard before.

Jeff Buckley - tragic reason for that - several singles but really only one hit with Leonard Cohen's Hallelujah and it was 10 years after he died.
Blind Faith- now I would never call them a one hit wonder but technically only one single from their only album charted "Well All Right" / "Can't Find My Way Home" although I think all 6 tracks are brilliant. Clapton left before they even really did anything (a few shows) because it was too much like Cream.
Lauryn Hill - again maybe not a one hit wonder as more than one charted but only "Doo Wop (That Thing)" was a HIT. #1 album sold 10 million copies and then she just disappeared and never made another album.
