Last year I made the same meal later in the winter and while it was great, it's just not the same as it is on New Years Day.

This has been a great tradition for the last 10+ years for my family. Thanks, spadilly!

In 15 minutes I will add the tomatoes, ham and sausage.

I used uncooked bacon… is that ok?

Used some Creole mix from HEB that has the onion, green onion, bell pepper and garlic.

Put in 7 cups water and about ,5-1 cup chicken broth.

The tyme, oregano, hot sauce and worchestire , jalapeño pepper is not much… can you taste any of it.

I do think it will be good.

My in laws just bought a bay house in Palacios so we're down here today but they don't have propane hooked up, so having to go with a crockpot…not sure how this will turn out but we'll see!

Good stuff, first time cooking this. It's like a black eyed pea based gumbo…. least thats how it came out for me.

How was it with uncooked bacon? I always cook it first.

I just always avoid eating the uncooked bacon in any dish.

First timer!
Kinda doubled the recipe to share with others.
Used one large jalapeno; has a sneaky heat, but very tasty!

Oh and used sage instead of thyme…seems I was out of thyme!!

Damn. I've been making this recipe for 14 years.
