Always a great base... I think I end up doing them a little differently every year and always love them.

Last year instead of the water I used about 4 light beers. This year I used dark ones. Throwing in some Serrano's as well. Can't wait to dig in

I still haven't ever found Cajun stewed tomatoes (or don't recall after making them 7 years in a row) so I either substitute a can of ro-tel or leave out altogether. I did add a can of beer this time. Not sure one can will make a difference but we'll see.

Can definitely tell depending on how much beer and what style I think. I made mine in 3 stouts this year so it was pretty drastic.

Has anyone actually ever found Cajun stewed tomatoes? It seems like there's a lot fewer available flavors of stewed. I've always just bought plain and done some Cajun seasonings.

I know how to cook homie, there was something wrong with the BEP's. I swung by my local HEB last night and they had a lot of complaints about them.
Got them in the crockpot now. Used fresh peas and only soaked for 2 hours. Hoping my ~8 hour cook time gets them where I want to be. Dont want to turn out like Ferris Wheel Allstar!
