I don't feel this was worthy of the food pron thread since it was a work in progress but we made onion soup over the weekend and here are the caramelized onions before we added the stock. I don't get a final pic either because we had guests show up and got lost in conversation. I will say this, use aged cheese to top the soup off. Younger cheese just doesn't get that crust. We just learned that the hard way.

Bbq at the house the day before the freeze. Ribs, brisket, smoked boudin, and hanger steaks.



PS. The ketchup there was for the little ones eating hot dogs.

PPS. My new Damascus brisket knife made it's debut.

Decided to make beef wellington the other night, and documented the progress.

Bought a whole tenderloin, got the center cut filet and salted 24 hours in advance



It was big so I seared it on the Evo



Assembly after mustard



Meat log ready for company to arrive



Puff pastry and a half assed decorative attempt



450 until 85 internal



Rested to 135



Served with truffled goat cheese mashed potatoes and brussels

Six months is too long for this thread. Did a bit of a food trip to NYC this weekend. My wife and I went to The French Laundry on our honeymoon, so we wanted to try Per Se as an anniversary treat. However we wound up booking all four Michelin three stars in NYC. Unfortunately, Masa canceled us so we were left only with tasting menus at Le Bernadin, Per Se, and Eleven Madison Park.

Too many pictures to post, so just a few highlights.

Le Bernadin:

Best Cuban sandwich outside of Havana is at Cochon Butcher in New Orleans (to be honest, it's probably the best anywhere).

I love cochon butcher. Muffuletta, buckboard bacon melt, pretty much any special. Night time special of fried pork chop with red beans and rice is great too

We ate at bluezoo at Disney's Dolphin resort last week and had a great time. Worth a reservation on your next trip to Orlando. (Particularly good for a parent night out while the kids eat room service pizza.)




Also, Food and Wine Fest recently kicked off at EPCOT. It's a great excuse to take a quick long weekend trip.

We had a stop in Vegas last night so naturally, I went to grab some Nam Koa Tod at Lotus. Then woke up and hit Bouchon for breakfast before heading out.

Went to Makoto in Panama City, Panama. I thought it was excellent and on par with Omakase Table in Atlanta at a third of the price.

How did you like EMP?

Daniel Humm has taken over what was The Charleston Grill for a one year pop up. It is a place we and our friends would frequent and we were not happy he of all people was coming in and our favorite spot closed after 37 years. One of our friend couples had their rehearsal dinner there. Some of our friends went to the friends and family preview and said it was decent be we were out of the country and didn't get to go.

We thought it was great. We aren't vegan obviously but I was really impressed with what they could do. We'd go back, especially now that they're going back to some meat.

Thanks.

He serves fish, chicken and lobster on this menu but no beef, pork or lamb. And that chicken is a whole roast chicken on a tasting menu which makes no sense.
