Anyone just get sad thinking about food you grew eating that you just literally cannot get anymore? Here's a few of mine:

-Mazzio's Pizza, I think every pizza party I went to as a kid growing up was there.
-Jello Pudding Pops, long before Bill Cosby was a known sexual predator he was the spokesman for the best frozen treat to exist at the grocery store. I saw something in the past year or two called Pudding Pops at the grocery store, but they were not the same, they were just lies, like Bill Cosby's image.
-Hamburgers from the little league field where I grew up, I don't know what the deal was, but they were the best.
-Fish fried by my grandpa.

Stupid food feelings.

Chocolate silk pie my grandmother made. She wasn't even a good cook and it usually had cigarette ash in it, but she died when I was 6 or 7. Id eat the **** out of it to play cards with her again.

My other grabdmothers butterscotch banana pudding. Same, so we could eat and play yatzee.

McDonald's french fries before they became a disgusting soggy mess fried in "healthy" oil.

A&W served on the window of the car by the carhop with icy cold root beer in a frozen glass mug.

The one other thing were these rolled soft tacos served up at a taco stand at the Fresno County fair out in California. I've never had anything since that could match these things; they were freaking awesome.

My paternal grandmother's squirrel mulligan. I made it for her from her recipe (XX number of potatoes, depending on how much money we had was a typical ingredient listing). She was 94 and died a month or two later. It was probably the most she ate in the last year of her life. I haven't had it since, but would love to have a bowl with her now.

There was a seafood restaurant called Bill Martin's in Fort Worth. Their hush puppies were great.

Taco Bells Bell Beefer. It was taco meat on bun with sauce and onions.

2nd the A&W root beer in giant icy mugs.

Cheese enchiladas. It's now been 20 years since I've lived in Texas and this is the one Texas food that I find the most difficult to replicate. I can make great fajitas, queso, brisket and chicken fried steak, but I can't make cheese enchiladas served with beans and rice and served on a plate so hot that it caramelizes the outer edges.

That is correct. Bill Martin's 1st edition, 2nd, etc. Their menus were laid out like a newspaper.

The last one I remember was between Burleson and Alvarado on 35.

I'm generally not a fan of the Homesick Texan because the recipes always seem like a yankee version of a Texas dish. However, this Enchilada recipe seemed pretty solid. So solid, in fact, even to the point it was familiar. I walked over to my cookbook shelf and sure enough that recipe is straight up plagiarized from Matt Martinez Poor Boy Enchilada Gravy (Matt's El Ranch & Rancho Martinez restaurants). The only thing he changed was adding beef stock which is a terrible idea for enchilada gravy. What a complete and total loser to not site his source.

I'll usually make Poor Boy gravy when I want simple cheese enchiladas to serve with Asada or Fried Eggs, but, generally prefer Chili con Carne for a main dish. If I have a cup or so of leftover homemade chili, you can add that to a recipe of Poor Boy as well for great Con Carne

Bruce, at Mexican restaurants they roll the enchiladas ahead of time and when the order comes in they are sauced and thrown under the broiler to heat. Indeed it's hard to replicate at home. That said, lots of folks have made my enchilada recipe and enjoyed the results. I made them just last week.Good luck!

There was a seafood restaurant (Ray's, maybe) in Plum, Texas that was awesome. They would serve a small bowl of red beans and rice after you were seated, and their fried shrimp were perfect. Bill Clements would be there at least once a month.
Blue Bell Tin Roof Sundae ice cream. Can't find it now, but the HEB Floresville peanut Tin Roof is great (when they make it).

P-O Sams BBQ in Colbert (or Cartright?) Oklahoma. It later became ?Sam's or Ray's? BBQ with a similar "BBQ gravy" instead of BBQ sauce. Periodically restaurants will show up in the Sherman/Denison/Texoma area with a similar gravy, but nothing beats the original.

That gravy was crack once you acquired the taste. Briskett drippings, flour, and a crap-load of spice (cayenne, paprika, etc).

There are still Mazzio's in east TX. It isn't the same as 35 years ago when part of their schtick was the toppings under the cheese.

I haven't been to one in at least 15 years. My grandparents grew to love it when I'd visit in Palestine and became regulars. I remember my grandmother's funeral back in 2006. The lady that had been the long term manager at the Mazzio's showed up, still dressed in her outfit. I remember watching her walk by the casket in tears.

She might have taken a few recipes from Matt Walsh as well, that might even be one honestly. I have his Tex-Mex cookbook (and others) on the shelf, was just too lazy to take it out and check. I have been meaning to give your recipe a shot. Several of her recipes are really close, but you're spot on, she lives in NY, and some seem just a bit off.

She also has the recipe listed for the original Ninfa's green sauce, I believe has a photo posted of where she found it in a newspaper from a long time ago. When I made it I may or may not have had a tear come to my eye. Same thing happened the first time I made legit homemade flour tortillas. I don't have the luxury of walking into HEB and going home with a bag of fresh tortillas, all I have access to are mass produced garbage tortillas from the grocery store. One day I just decided to order a tortilla press, went to the store, bought some lard, and then I had fresh tortillas (I've tried homesick texan's before and they are way too fluffy.) They aren't a ton of effort, and I make them if I have time, nothing beats homemade tortillas. A simple thing like legit refried beans, rice, and cheese on a homemade tortilla is straight up heavenly.

Two Christmas Eve's ago, I got the lazys and decided to make the homesick texan enchilada recipe instead of my normal go to, fido98 recipe. It was terrible and since then I have had a lot more volunteers to help cook the other stuff as long as I use the "right" enchilada recipe.

The calzones and buffet at Mazzio's were legit. The latter was great for a broke college kid, but the last time I went to the Kilgore location a few years back was disappointing.

Captain D's/LJS (I realize they're in existence but nowhere near me)

It was my parents fast food vice when I was growing up, so we ate it 4-5 times a year. I miss that batter, the fish and chicken planks. The greasy grossness reminds me of being a kid in old sugar land.

I loved mazzios in Tyler after Sunday church. Buffet was awesome and the arcade games were a blast.

Also I was a busboy and waiter and El Charros #2 through high school. Loved eating there as often as I could even when I wasn't working.

Chicken and dumplings.....yes, you can still get it at restaurants, but nothing like my mom and grandmother made. Still trying to perfect the recipe, but have a long ways to go.

I was about to post pretty much the entire early '80s Chilis menu. Perhaps it was because I never got out much before then. But it was also because it (Chilis) was so much better before their marketing department took over and they had to become like everyone else.

And yes, Schlotzkys back in the day was great too. Today? Borderline inedible.

1) McD's fried apple pies. The baked ones suck.

2) Joe''s BBQ beef ribs in Alvin. They were good. Joe's is a shadow of what it once was.

3) Taco bell fire tacos. Also, the beef baja chalupa.

4) Maple nut goodies from the bin. They always seemed fresher than the ones you get now from the foil package.

5) Sonic's patty melt. It was pretty good.

6) Petrol Station's Rancor burger. Even the name was cool.

Also, one that we brought back in my house that my parents did not have but my grandparents did was butter sitting on the kitchen cabinet in a butter jar, so that it wasn't too cold to spread.
It takes a special kind of brainwashed useful idiot to politically defend government fraud, waste, and abuse.
