Lookin forward to reports from Heritage's festival

Report is that California was awesome, and the festival was a great time. Favorite bite I had was a porkstrami sandwhich by The Bad Jew out LA. Didn't get many pics because I helped some buddies serve. Here's some pics of the spread we got from Heritage the day before.

Awesome! Hoping to catch next year's if I'm still out here.
Just saw a write up on Horn BBQ up in Oakland. They look really solid.

Just curious, what are you guys and other top spots paying for brisket these days?

Terry Blacks in Dallas today was disappointing.
My favorite part was the mac n cheese and green beans. The meat was luke warm and the brisket, ribs, and turkey were ok at best.

Should have gotten crab legs at Nate's like I originally planned

That's surprising. Haven/t heard a negative comment about them yet. Wonder if they're expanding too quickly. Have one either open, or opening soon, in Lockhart which I think is a huge middle finger to their uncle.

Haven't received a brisket order in awhile, so I'll need to check with our kitchen manager. We're using heartbrand akaushi, so it's definitely pricey.

I should not be running to the bbq sauce to choke down dry brisket

100% trying to drop a steaming grumpy on the uncle. There's something weird about bbq places and siblings and them not working out. I wish someone would write a tell all book on all of the BBQ beefs, it'd be a best seller. Kruetz vs. Smitty's, John and Wayne Mueller, Terry and Kent Black, hell throw in Aaron Franklin and John Lewis as well, even though they're not related. Best seller. Book it.

I'm staying pretty busy these days and it's been a few years since I've gotten to take barbecue trips around the state. I finally let my out of date bbq site expire.

Our typical Sunday lunch is at Killens in the woodlands. It's nearly always been top notch. However, it's wavered in quality recently. The new manager seems to have run off a lot of the employees, including the pitmaster.

We're taking a break and hope they figure stuff out.

Barbecue joints seem like they would be particularly sensitive to staffing changes.

Is this location specific? Just found out an old coworker of mine is at NASA now and I was providing BBQ recommendations as he's from out of state. Said the best near him would probably be Killens in Pearland.

3rd Coast BBQ is pretty great BBQ place in the Woodlands if you haven't tried it out yet.

One weekend I had cattleack on a Friday and ended up in Lubbock on a Saturday to visit my sister and nephew and ate at Maes. Ate like a king that weekend.

You're comparing apples and oranges though with type of brisket and their costs. My assumption is they aren't using akaushi briskets...

No that's exactly the point I was making - they use Akaushi from Heartbrand
Saxsoon

Yep they use heart brand. The brisket was more expensive at terry blacks by quite a bit despite what cattleack using Akaushi heartbrand

Cattlelack cooks Prime.

But if you know what you're doing Select makes a damn fine meal. Ask Snow's!
