My biggest problem with Hard 8 is consistency. I've stopped going because it's expensive, crowded and the meat is either really good (rare) or average (most of the time). So 90% of the time I've been, I've left underwhelmed. Unfortunate because I like the atmosphere a lot. I used to go to the one in Brady 20 years ago when hunting and loved it. Think they must have sold out to an investor because after they shut that one down they started expanding all over DFW.

Went two weeks ago and thought it was really good relative to our expectations. The entire space is a pretty sweet set up too. Cheaper than most other BBQ places as well.

Just had a sliced brisket sandwich to go for lunch. I agree, don't know if it was lower expectations or what but I was actually impressed for what it is. A lot better than Rudy's that's for sure. There was still a bit of a line and as I was picking up my order noticed that there was a drive thru as well, don't know what that line looked like either. Probably should've tried to call in the order.

The ribeye was always my go to at Hard 8. Cooked just a few inches over charcoal, and was always consistently good.

People were waiting outside at Babe's, which is how we ended up at Hard 8. Babe's was our original choice.

We went during football season a couple years ago. We got there right before 7 and we're like 160 in line. Chicken was sold out when we ordered but everything else was available.

You must get the pork steak and brisket.

if you can swing it look at football schedules and try to go when there is an 11am or Noon kickoff. if there is a later kickoff there will be extra people there buying meat for tailgate parties

How about a little restaurant thought experiment? Maybe this has already been done before, but I've been thinking.... Build the perfect bbq tray from around the state (or wherever you've been) and lets see what folks have to say. Something like 4 meats, 4 sides/desserts/other.

For me:

Brisket from Franklin
Ribs from Truth
Pork Steak from the Burnt Bean
Pico sausage from Brett's Backyard BBQ

Goldees Bread
Street corn from Burnt Bean
Chicharoni mac n cheese from 2M
Smoked scallop potatoes from Interstellar

I've been at 8:30 and been about 120th. Ate at 10:45 and the only thing we couldn't get was chicken.

I've been at 7:30 and been on the porch.

I've been at 8:00 and we turned around and came home. It was probably 250 people deep and there were RVs everywhere.

Get everything but the gem is the pork steak. It may be the best bite of BBQ there is. When I die I want my last meal to be all you can eat Snow's pork steak hot off the pit.

I've been wanting to make it to Goldee's. Now you have me wanting to see what's so special about it that it beats out a number of other side selections (like the carrot souffle from Tejas).

I remember seeing pictures of Briscuits on this thread a long time ago. I've never been but those pictures are still engraved in my brain. Definitely want to try this out.

The good: the meat (smoked by former cook at Stiles Switch, Freedmans), jelly, and biscuit were all freaking delicious. Best jelly I've ever had. Biscuit was up there as well.

The bad: this may be a one and done experience. I feel like if everything were deconstructed I would definitely come back. If they had a "country breakfast plate" with brisket, eggs, biscuit, and hash browns Briscuits would be a top breakfast destination in town.

The ugly: I have jelly everywhere! It was a handheld mess.

Secured the bag this morning. Pork belly biscuit from Briscuits in Austin. So great, and for as rich as the pork belly and and sweetness of the jelly it balances out so great with the homemade biscuit. Only knock on the place is the parking sucks when Radio Coffee is busy.
