First trip ever to Franklins this week, a wise man once told me you can show up on the occasional Tuesday or Wednesday after opening and catch a short line. I finally hit the jackpot. 25 minute wait and we were eating. Not too bad.

The proteins were done very very well, brisket was stellar, ribs were cooked perfect (wasn't a huge fan of his rib sauce), really liked the turkey as well, but it was extremely tough. Sides were nothing to brag about and pretty underwhelming. All in all, I'd go back again on a short line opportunity.

And going to Dickey's is like playing one of those eight-liner machines in a South Texas gas station.

We've recently had an African-American couple buy the Dickey's closest to my office. And I'll be darned if they haven't made it pretty close to edible. They are even coming around to the local businesses and handing out coupons and advertising their catering.

Roegels BBQ in Katy today.

Brisket was basically perfect. Pork belly was absolutely elite. Perfectly rendered fat, tender meat, peppery bark.

To be fair we don't get any cross cut shots in that pic, and it's a bit aways from the table. Can hardly see the details!

The sides were definitely their weakest link when I went a few years back. Meat was killer, though.

Yea they still do Pre-Order but you got to do it for a like 42 days ahead of time. We had Franklin's catered to the office for some of our meetings.

Also consider the source… Thats in no way a cut either… This guy has access to world class BBQ all the time. Much more so than many of us probably do. I'm sure his palette is pretty finely tuned!

This is what $100 gets you at Terry Black's. I remember the days you got good BBQ that was cooked out of a car garage on a Sunday for fast food prices. Now I'm basically committing to Steakhouse prices at some BBQ joints. $10 for a sausage link, same for a single slice of brisket, $40 for the beef rib (which I knew would be pricey). It was good, don't get me wrong... but my goodness... I'm in the wrong business of this is what they charge for lines out the door. People pay it. I did. Good for them I guess.

The whole tip thing has gotten stupid. Many fast food/fast casual are making you cycle through a tip screen while walking up to place your order, picking up your own damn food and drinks while cleaning up after yourself. Insanity.

The sides were underwhelming, I believe I said the proteins were done very well. I weighed the platter I got (with the underwhelming sides) against platters I've had at other places. Which is a lot of places. It was great, but I've also had better. Nothing I said in my review was meant as slight to Franklin's. There are newer spots in the state and country that have further elevated what Aaron Franklin started.

Nothing against Aaron Franklin but I'd say Louie & Bobby Mueller are the forefathers of Central Texas BBQ

I have zero inside info on this particular project, but that makes a ton of sense with how they've been expanding.

They buy up real estate all over and I imagine the new Waco location is going to be a huge success, so why not keep growing

Especially with Helburg going down for now, plus the Magnolia rush, I think it will do well for a while.

Guess was really good, but they've moved down on my list a little bit.

True. Opening Waco store in January. Don't know timeline for San Antonio and Houston.
