whosampled.com is a great website that has not only covers, but also a great deal of all the samples ever used, paired with the songs that sampled them. it's a great time waster, and is a lot of fun to hear the source material to your favorite hiphop songs.

i've just skimmed over this but i haven't seen foo fighters mentioned and they do pretty cool covers of both "darling nikki" and "baker street".

Emmylou Harris' version of "Pancho & Lefty" from her Luxury Liner album, around 1975 or so. Not only is it my favorite version of that song, it's one of my favs period. First heard it in the Chicken as a student.

"The Tracks of My Tears" is one of my favorite songs, and I can't imagine any cover being better than the original.

To add to the discussion, I'll throw out The Black Crowe's covers of "The Night They Drove Ol' Dixie Down" and "Space Captain." Also, the Allman Brothers Band's cover of "Stormy Monday" is good, too.
