Heart doing Stairway at the Kennedy Center Honors for LZ is neat.

I know Disturbed covering Sound of Silence is a love it/hate it deal. I think it's a totally different song and better than the original. It's dark and moody and expresses the lyrics so much better.

I personally thing Clapton and a cast of a hundred doing While My Guitar Gently Weeps is the best rendition of that song ever. It's not fair to say cover when 3 of the original 5 musicians are doing it but I don't care. Prince may be going nuts in the RRHOF version but Slowhand makes so much more emotional. Plus he's playing the full lead and singing it. He literally makes his guitar weep with the blues sound.

Placebo's cover of "Running Up That Hill" is vastly superior to the original Kate Bush version.

Willie Nelson - The Scientist
The Byrds - You Ain't Goin' Nowhere
Drive By Truckers - Rebels
Turnpike Troubadours - Long Hot Summer Day
Robert Earl Keen - Long Black Veil

Someone mentioned Bob Dylan as having a lot of songs done by others that turn out better, and I agree. I'll also throw out Black Flag as the punk version of that - I end up liking covers of their songs better than the original in just about every case.

I don't know how I never saw it before but that RRHOF tribute to Harrison one with Tom Petty etc and the casual "end" Prince solo was a Masterclass in a guitar solo and showmanship, wife is probably gonna be pissed as I think I have to watch that performance 100 times now

I'll chime in with some classic jazz, two that quickly come to mind - though there are probably 100's
1-John Coltrane, My Favorite Things; he takes the Sound of Music innocence and turns it into an absolutely creative piece. Several versions available
2-Brad Mehldau, Blackbird. Many Beatles songs are better as re-do's rather than the original (Joe Cocker mentioned earlier). In this one, Mehldau uses a light touch on the piano giving the song a new interpretation

I'm going to bust out some 80's club covers that gave different (maybe not always better) versions:

Don't Leave Me This Way - Communards
Jolene - Strawberry Switchblade
I Beg Your Pardon - KonKan
Always on My Mind - Pet Shop Boys
Dear Prudence - Siouxsie and the Banshees
Route 66 - Depeche Mode
Lean on Me - Club Nouveau

The really amazing thing about Elvis, Simon and Garfunkel, Karen Carpenter and all the rest in those eras is there isn't any digital processing or auto tune happening. It's just voice, amplification and some manual upping or lowering of certain frequencies.

Many on here were good ones. Dwight Yoakum does good with Elvis songs.

Desperado - Clint Black
