Crazy that Bolsa is closing. It used to be one of my and the wife's favorite spots a few years ago. Definitely went down hill the last few years as they lost some good people.

I wonder if it's because they way overbuilt the structure? Damn weird building for a diner. It's basically built like a church sanctuary with that completely unnecessary roof.

I remember reading they had issues with staffing,that the owner had not encountered at other locations he owned. Whatever that means

Jack claimed he had to close it because he couldn't find labor. Now I know labor is a big headache in the business but come on... the restaurant likely failed for the same reasons that restaurants typically fail for: inability to produce a profit or even cover costs.

I thought the food was pretty good and wish they would have made it. At the end of the day though, it is a style of food that is dying and you have Celebration, which does similar things, right down the street. His insistence on not doing all day / all night breakfast was also interesting given the use of the word "diner."

You're right. It was probably a combination of both. And I've never understood the concept of high dollar comfort food. L the draw in home cooking is simplicity. There is no reason a chicken fried steak needs to be $15.

And the staffing thing is very real. Lupe Tortilla has been done in Allen for about 2 months and is just now opening because they couldn't get it staffed.

Staffing is a huge issue in DFW. Massive shortage of people that want to work in that industry. Young people simply don't want to work that hard for that pay.

Or is it that there's an overabundance of food service establishments in the metroplex? Observationally, there seems to be way too much supply in certain segments.

Am I reaching in assuming they overdid it with the facility itself and being able to cover the costs of it? It had a lot of wasted space in it and I wonder if the utility bill itself was way higher than normal due to its characteristics.

Food was good though. I just don't eat like that very often. Coincidentally, this was also the first restaurant where the bathroom sink was out in the restaurant and not in the bathroom. Going the public shaming route on washing your hands!

I never went but the build out seemed very nice/high end judging from the outside. I always thought it was a super weird location. I could see renowned BBQ place surviving because that's the type of place people seek out and go out of their way to eat at.

It was actually one of the most pleasant diners I've ever visited. Because of the large vaulted ceilings and the sound control measures (fabric panels on the ceiling, etc.), all of the ambient noise got trapped up there. Even when full at breakfast/brunch the place wasn't obnoxiously loud.

I'm glad to see this building will live on. It's a neat structure in a sea of mediocrity over by Love Field.

Totally agree!

I was just curious if the costs were a factor. Maybe it was built such that all of that was negated though. It is a new building so it could be very efficient.

To a point. There are too many "fast casual" and/or casual spots in the city which all pay the same. The burger and pizza spots are usually going to get the good help due to work load and simplicity versus the diner or healthier options that require much more prep and overall work.

One thing that will suck for them is parking. They have a lot, but there aren't a ton of spaces. Of course Pecan Lodge doesn't have any dedicated parking and the one in Bishop Arts has none or very little.

Definitely sounds good, I hope they can replicate the consistency day in and day out. I hate to be cynical but I can see this one not lasting long. Tough location and likely too pricey for that area.
