There are plenty of ways to concoct vegetarian options at MT. We have a vegetarian taco and you can also get anything in a bowl.

I think you will find that most places with fresh tortillas are using lard for the flour tortilla, as that's the standard from Mexico.

We do also make fresh corn tortillas that have neither seed oil or lard.

Edit: Our needs were easily accommodated by the young man at the register, who was very patient while my wife explained our needs. The tacos were delicious and very generous. Thanks! We will be back every weekend!

Since we are now in mid-2026 and you haven't seen a ribbon-cutting, here is what is likely happening behind the scenes:
  • Corporate Momentum vs. Local Reality: Nationally, the brand is in "growth mode" with a new CEO and a smaller-format cafe prototype designed for faster builds. However, the College Station project has clearly hit a snag.
  • The "Silent Period": In the franchise world, if a site isn't open 612 months after a target date, it usually means one of three things:

  • Site Selection Struggles: They may have lost their intended lease or are struggling with the specific "shell" of a building in high-traffic areas like University Drive or Century Square.
  • Permitting/Infrastructure: College Station's development codes can be rigorous, and utility or drainage issues frequently stall projects for months.
  • Franchisee Delays: SM Franchise LLC also committed to locations in Houston; sometimes resources are shifted to the market that is "ready" first.

The good news is that the franchise agreement remains active in corporate reporting as of early 2026. Unlike the 2020 rumors which were largely speculative, there is a legal contract in place for these locations.

I was shocked to find out that unless you are trading them out for a full one, Walgreens doesn't want them empty. I had two of them I wanted to return, and I had to just go when they were closed and leave them next to the cage.
